Wash the rice until the water is clear and boil until half cooked. Drain the water, then pour the milk over the rice, wait for it to boil, and cook for another 20 minutes. With orange remove the zest, squeeze the juice. In the finished rice, add orange juice, yolk and butter. Mix well until smooth. Beat the protein into a fluffy foam and gently introduce it into the bulk. Add sugar, orange peel, if desired - cinnamon.

Fold the mass into molds and ship to a double boiler for 30–35 minutes.
